Fresh Ribeye Steaks on the the Grill is what most people consider Grilling. Most wouldn’t guess they are being cooked on an indoor Grill by Gaggenau.

What is Grilling?

For most people, “Grilling” pertains to the use of an outdoor Grill. However, not all “Grilled” foods are made that way. When you see Grilled Chicken in the Freezer Department at the store, it is unlikely that any of it has seen the Outdoors or a Grill. Similarly, a great number of restaurants have Grilled Chicken and Steak on their Menus for Salads, Sides, Pizzas and Entrees. Many of them use a Grill Pan to achieve the familiar Grill Marks, while others Pan Sear, Broil, or Bake the meat.

Grilled Cat Food is more for making human mouths water, probably not of much consequence to our furry friends.

For better or worse, there are no “BBQ Police” to prevent manufacturers from even offering “Grilled” flavors of pet foods… So it seems that adding any form of Charred or Smoky flavor is enough to call a product “Grilled” nowadays. Of course, many GrillMasters shudder at the thought of this. For me, I shrug it off. Consumers are always free to pick and choose the products they want. If something labeled “Grilled” meets their satisfaction, that is what the marketplace is all about.

This indoor built-in Mesquite Charcoal Grill has been at Musso & Frank Grill in Los Angeles since 1919. It is said to be the oldest working Restaurant Grill in Hollywood.

When you see something labeled Grilled, it usually falls under one of these 10 Most Used Categories or Ways We Think of Grilling:

1. Grilled Flavored– Products that use smoky spice blends, manufactured seasonings or processes to add flavor.

2. Cooked on a Flat Pan or Griddle– Most popular as the method for making Grilled Cheese and grilling Bacon Wrapped Hot Dogs.

3. Stovetop Grill Pan– The easiest way to get Grill Marks from indoor cooking, but not Outdoor Grilled flavor. An invaluable tool for Food Stylists and Photographers.

4. Oven-Safe Grill Pan or Broiler– These are good ways to get Grill Marks and add authentic Charred flavor to foods.

5. Indoor Countertop Grilling Devices– Probably the most famous is the George Forman Grill, which opened the floodgates to a stockade of similar items. These are said to cook foods with less Fat.

6. Indoor Built-in Gas and Electric Grills– Found in many Restaurants and upscale Home Kitchens, these come close to replicating the flavor or Outdoor Grilling, but not as close as the next one.

7. Indoor Wood and Charcoal Burning Grills– The best way to replicate the flavor of Outdoor Grilling. However, a challenge to get approved in Restaurants for sanitary reasons and concerns about ventilation. While rare to see in Restaurants nowadays, my favorite is the 90+ year old Mesquite Grill, still found today at Musso & Frank Grill in Hollywood, CA.

8. Indoor and Outdoor Wood Burning Ovens– If they can “Grill” food using conventional ovens, these offer the flavor closest to their outdoor cousins with grates.

9. Open Flame and Outdoor Pit Cooking– The oldest form of Grilling that exists. Our ancestors were not quite able to purchase Weber Grills, but managed to find a myriad of ways to cook food over open flame.

10. Homemade, Masonry and Manufactured Grills– What we most think of when we speak of Grilling. They use Charcoal, Wood, Gas, Electricity or Lasers to cook food. Ironically, most “Grilled” food products sold on the market today never come anywhere near an Outdoor Grill.

Wouldn’t you love to have been there when, after discovering Fire, the first Caveman decided to try putting some sort of Fruit, Vegetable or Meat on a Grill? Even before the time of known migration, ancestral Pitt Masters from all over the continent managed to find creative ways to cook food. This tradition is kept popular today thanks to Facebook and other Photo sharing websites and platforms where people share homemade Grills from all over the world. They are made out of anything from Patio Furniture to Shopping Carts, and even Porsche automobiles. Photos of the DIY Ceramic BBQ Pot Smoker that I made last year (using flower pots) are still being shared around the world.

What is BBQ?

When you think about it, this could one of the World’s Greatest Mysteries. How did the word “BBQ” spread across the planet? Could it be with our language differences, it is just easier to say “BBQ” to describe tasty food? This all-inclusive term is used regionally around the United States, and in countries all over the world. It would take written volumes to describe all of the different styles. For the purposes of this Series, we will go over some the more common ways food considered BBQ is prepared around the world.

 The Top 4 Ways the Word “BBQ” is Used:

1. Seasoned Foods– Many of these come nowhere near a grill, but are seasoned with dry mixtures that possess the familiar sweet and smoky flavors; i.e. BBQ Potato Chips, Pork Rinds, Sunflower Seeds, etc…

2. BBQ Sauces– They come in a wide variety of flavors and colors all over the world. Most are commonly added to Grilled or Smoked foods. 3. Grilled Foods– There are a vast array of cooking styles and techniques that people consider Grilling. From using a Griddle, to a Grill Pan, charring food in a Skillet or Wok, Stovetop and Countertop Grilling Devices. Of course there is outdoor cooking with Open Flame, on a Grill or in a Pit.

4. Smoked Foods– For some people, food isn’t BBQ unless it has been infused with some form of smoke flavor. This can be done with Liquid Smoke, Wood Chips, Wood Chunks or cooked in a Wood Burning Oven, Terrine or Pit.

Of course, there are many exceptions. For some reason, when it comes to Vegetable and Seafood dishes, people tend to refer to them as “Grilled” or “Smoked”, as opposed to BBQ. This is true even when they are cooked using the same techniques as the Meats. The popular dish BBQ Shrimp in New Orleans is sautéed in a skillet and served with a pan BBQ sauce. A big food chain in Korea is called BBQ Chicken. For them, the term “BBQ” stands for “Best of the Best Quality”. While Grilled Chicken is on thier Menu, the chain is best known for Fried Chicken. Go Figure…

Barbecue Season is in full swing in countries all over the world. If you are like me, you’re always searching for something exciting and new in your travels. Especially when it comes to Food. Since my interest is Grilling, I always try to find something grilled on restaurant menus wherever I go. Wish every city had a BBQ Tour, where I could link up with a BBQ Chef and explore some of the best local places to eat (and avoid the over-priced tourist traps with mediocre food).

Steak & Co. is a Class Act with a variety of Rib styles. They are said to have some of the Best Mac and Cheese in London.

As it turns out, I usually end up creating culinary tours for myself whenever I visit cities outside of Los Angeles. I utilize a combination of Yelp, Trip Advisor, “Local BBQ Restaurant Reviews” (Google Searches), and good old “Word of Mouth” from Locals. Thanks to Facebook and Google, I am also creating a Friends’ network of Gluten Free and BBQ Foodies and Chefs from all over the U.S., and abroad.

Two Sundays ago, Drop Dead Diva aired an Episode called “Hero” about a guy who decides to make the world a better place by dressing in costume and saving people. I wear my signature costume sunglasses when I do appearances to Make the World a Better Place to Eat. Also, the latest Rub from my company is called HEROIC!. The first product we released is POWER. The fictional product in the “Hero” Episode is called “Power Blast”, it is an all-natural energy Supplement. Our product HEROIC! is becoming well known as the all-natural BBQ Rub with Superfoods. Last night, I watched with great anticipation the “Milwaukee Madness” Episode of the new show Frankenfood on Spike TV. No, I didn’t win the big $10,000 Prize. Yes, I am barely seen in the show that aired. But they were kind enough to feature me in an Online Video called “Frankenfood: Frankenfail: Popcorn Lips Now”. On the day of the shoot, I thought my round with the Judges went pretty well. Judge Josh played with my sunglasses and couldn’t stop eating my BBQ Popcorn dish. Judge Tony said “This Seasoning is Genius. I am going to take it and make a Million Bucks.” So when my Dish wasn’t right for Judge Krista’s “upscale” Wisconsin restaurant, and they were throwing things at me, I decided to throw my business card back at Judge Tony. You’ll have to see what they did with editing, where they took out all of the positive comments about my flavors (though you see Judges Tony and Josh licking their fingers- Spit Bucket is nowhere in sight).

Yes. I will still maintain my sense of humor. I will continue to watch TV, even Frankenfood. I am sorry to see Drop Dead Diva expire after only 6 Seasons. Bacon Cheddar BraziBurgers: Gluten Free BBQ for the 4th of July

Bacon Cheddar BraziBurgers are delicious and easy to make. Even better with Grilled Onion and Basil Mayoli.

I first encountered Cheese Bread Brazi Bites at the Gluten Free (GF) Expo in Pasadena in June 2014. In a ballroom dominated by Sweet GF Treats, it was really a delight to discover these savory Snacks. Made with Tapioca Starch, the texture is soft and smooth. The Cheese Bread Snacks (with Parmesan, Cheddar and Bacon) didn’t taste anything like Diet Food. In fact, the intense Cheesy flavor reminded me of the Deep Fried Cheddar Balls I used to get in Chicago and Wisconsin. I have been obsessed with Brazi Bites ever since.

Brazi Bites were demonstarted at the Gluten Free Expo, sponsored by the Celiac Disease Foundation in June, 2014.

The opportunity recently came up for me to cater a Political Fundraiser, hosted by a friend who happens to be Gluten Free. The Menu was to be substantial Hors D’oeuvres that people could grab and go while having conversation. When I mentioned the possibility of making Mini-Burgers using Brazi Bites, the hosts loved it. So did the crowd on the day of the party. The Fresh Baked Buns made them especially delectable. Perfect for the 4th of July, or any party. No one even guessed that the Mini-Burgers were GF.

BraziBurgers are made with Brazi Bites Cheese Bread Snacks and seasoned with HEROIC! Herb and Spice Blend.

BACON CHEDDAR BRAZiBURGERS with SMOKY GRILLED ONION AND BASIL MAYOLI

(For 10 Mini-Burgers)

Ingredients:

1 lb. Ground Beef (80/20 suggested)

2 tbsp. HEROIC! Herb and Spice Blend (by California Gold BBQ Rubs)

1 tbsp. Worcestershire Sauce

1 tsp. Fresh Ground Black Pepper

1/2 tsp. Salt

10 frozen Cheese Bread Brazi Bites with Bacon

For Mayoli:

1 Cup GF Mayonnaise

1/3 Cup Chopped Fresh Basil

2 Thick Slices White Onion

1+1/2 tbsp. HEROIC! Blend

Cooking Instructions: (If no access to Grill, feel free to use indoor Grill Pan, Skillet or Broiler)

1. Preheat Oven to 400 Degrees and BBQ Grill to Medium High. Mix Ground Beef evenly with BBQ Rub, Worcestershire Sauce, Salt and Pepper. Separate into 10 Mini 1.5 oz. Burger Patties.

2. Place frozen Brazi Bites 1 inch apart on Baking Sheet (slightly greased or parchment lined). Bake for 20 Minutes or until Golden Brown.

3. Season Onion Slices on both sides with 1 Tbsp. BBQ Rub, then Grill for 5 Minutes each Side. Grill Mini-Burgers for 2 Minutes per side (or to desired doneness). Don’t walk away, they cook really quickly.

4. Once Onions are done, Chop them into a small mince, and mix with Mayonnaise, Basil and 1/2 Tbsp. BBQ Rub.

5. Gently slice Brazi Bites in half to form Buns. Fill each with one Burger and a generous Dollup of Mayoli. Serve and Enjoy. [We had optional GF Mustard, Pickle Chips and HEROIC! Ketchup/BBQ Sauce as condiments.]

Food is King (or Queen) at the 2014 Gluten Free (GF) Expo in Pasadena. Sponsored by the Celiac Disease Foundation (CDF), the event is fun and well attended. Here I am entering the Expo. Ready to dive in for the Food Booths.

My original Indiegogo campaign to get my product HEROIC! to the Pasadena Expo, took a fortuitous turn in San Diego (See Stars of Gluten Free Blog). So my current mission is for Education and to help raise Donations for the CDF. I mentioned the event being “Queen” because I got to meet the “Queens of Gluten Free” at the National Gluten Free Conference on Saturday. There was Pamela Giusto-Sorrels, founder of Pamela’s Products and Rachel Berliner, the co-founder of Amy’s. I also got personal advice on building customers (as a new brand) from Dr. Lucy Gibney, MD of Lucy’s healthy snack brand. Doors are open now, so I will get to some of my Highlights of the Gluten Free Expo:

Lucy’s GF, no Dairy Chocolate Chip Cookies. They can be served at any party and non-GF Kids won’t even tell the difference.

So Delicious Dairy Free Coconut Milk, Chocolate Almond Covered Ice Cream Bar. Same as above. Delicious Ice Cream doesn’t taste like “Diet Food”.

Mary’s Gone Crackers Super Seed Crackers- Fresh tasting and delicious Superfoods. Would go great with a sprinkle of GF Superfood BBQ Rub. (We’ll have to talk).

Pamela’s Figgies & Jammies; GF version of classic Fig New-somethings.

-The nice variety of the GF Beers and Wines were refreshing and delicious.

-Who knew Fritos were GF? and Lay’s Potato Chips…?

BraziBites Cheese Bread Snacks with Bacon. OMG- tastes as good as the deep fried Cheddar Cheese Balls we used to eat in Chicago.

Throwing a BBQ nowadays can be a tricky thing. Especially here in California. The Good News is that as Americans get more advanced Health Care, we are discovering more about Allergies and our Nutritional needs. The Tricky Part is that when you throw a party for family and friends, some Invitees may be Gluten Free, Vegan, Soy Free, Nut Free, etc..  you name it. Fortunately, most of them have the grace to warn the host in advance. You are Thankful. But then, what do you do?

Marinate Veggies in Olive Oil or your favorite Herb Dressing before taking them to the Grill.

Many people think of BBQ as fatty meats and heavy sugary sauces. Fortunately, a new day has come where Grilled and Smoked Foods are finding their way into many healthier diets. I recently had the great fortune of meeting one of my favorite- OK the favorite- Vegan Chef from New York. Her name is Jaquy Yngvason, a former Food Network Producer and now hosting a new series called “Tasty Freedom”, on a Youtube Channel. Not only has she offered her support for my new BBQ Rub product, she has graciously given me permission to have my way with one of her Recipes.

Besides Grill Marks, check to see if Veggies will bend. Then you know they are closer to done.

It was a “no-brainer” when I saw a Jaquy dish called the Superfood ELT (Eggplant, Lettuce and Tomato) Sandwich. Hello!? Superfoods are a big part of what I am doing with my Rubs. Her original Recipe Video is only 3 Minutes and Change. She prepares the dish in a Cast Iron Skillet. This would be a good time to meet Jaquy if you haven’t seen her yet.

Tasty Freedom Superfood ELT Sandwich

Wasn’t that Fun? Of course, I had to take the Recipe to the Grill. For my ELT, I added Grilled Red Onions for extra zip. Jaquy used Homemade Gluten Free Buns and a Caviar Mustard Sauce. I took shortcuts and used Organic Gluten Free Mustard and store bought GF Buns. I also did it two ways, using Portobello Mushrooms as an All Natural alternative for the Buns. This recipe is easy to make, just be sure to complete it before adding Meat to the Grill. I will do a copy/paste-able version of recipe, followed by more photos.

Grilled Superfood ELT Sandwiches Ready and Open for Easy Dining.

Grilled Vegan Superfood ELT (Eggplant, Lettuce & Tomato) Sandwich

INGREDIENTS (For 4 Sandwiches)

4 Thick Slices of Eggplant

4 Thick Slices of Heirloom Tomato

4 Thick Slices of Red Onion

Chopped Romaine Lettuce

HEROIC! Herb and Spice Blend by California Gold BBQ Rubs

Olive Oil or Italian Dressing

Organic/Gluten Free Mustard

4 Gluten Free Sandwich Buns

-Optional Substitute, 8 Equal Sized Portobello Mushroom Caps

Salt and Pepper to Taste

PREPARATION

1. Marinate Eggplant, Tomatoes, Onion and Mushrooms in Olive Oil (or Dressing) and HEROIC! BBQ Rub. Add Salt and Pepper to taste.

2. Heat Grill on Medium High. Brush and Oil Grates to prevent sticking. Then grill all Vegetables of both sides. You will know they are done when they can bend using Spatula.

3. Briefly Grill the Tomatoes last along with the GF Sandwich Buns.

4. Assemble Sandwich, adding Mustard to GF Buns (or Mushroom “Buns”). Pile with Eggplant, Tomato, Onion, then Lettuce. Cut in half, and Enjoy.

Briefly Grill the Heirloom Tomatoes. If overcooked, they will collapse and go mushy.

Thanks again to Jaquy for the recipe inspiration. The sandwiches came out tasting amazingly juicy and delicious. I highly recommend biting into them over your plate and not your pants. [This is, unfortunately, based on personal experience]. If you also have Carnivores at your party, feel free to toss a HEROIC! Marinated Steak on the Grill after the Veggies. Broccolli Curried BBQ Tofu by ZeNutritionFoods

As you may know, we recently held a Food Blogger Recipe Contest for HEROIC! The Winner was a Gluten Free Crockpot Beef Stew Recipe by Wheat Freely. I will be sharing it soon. In the meantime, these Vegan Recipes from ZeNutritionFoods are also Winners, in my book. You may want to try them sometime, as well. No Grilling is Required.

“California Gold BBQ Rubs are all natural and contain no salt or sugar. This unique blend of spices is much more than a BBQ rub. The variety of spices from turmeric to fennel would be a great compliment to many different dishes. Since I usually cook dishes with a global influence, I decided to do the same here to put my spin on it.”- ZeNutritionFoods

Tahini BBQ Tofu

1/2 package firm tofu, cut into cubes

1 tbsp HEROIC! California Gold BBQ rub

1/4 cup tahini

Pinch sea salt and pepper

~ Mix together the ingredients for the sauce, add the cubed tofu and stir to coat all the tofu pieces

evenly

~ Place on a baking sheet and bake at 350 for 20-25 min

*The tahini in this recipe gives it a little bit of a Mediterranean flavor.

BBQ Curry Tofu Scramble

1/2 package firm tofu, squeezed dry

1 cup broccoli

1 cup kale

1 tbsp HEROIC! California Gold BBQ Rub

1 tbsp curry powder

Sea salt and pepper to taste

~ Saute the broccoli in a little bit of coconut oil for a few minutes, add the kale and stir until it

begins to wilt

~ Crumble the tofu into the pan and add the seasonings

~ Stir well to combine and cook for a few more minutes on med/ low

*The curry in this dish works to bring out the cinnamon and cumin in the BBQ rub.

Original Superfood ELT Recipe by Tasty Freedom

Superfood ELT better than the BLT Recipe!! Eggplant Lettuce Tomato Sandwich. (Gluten Free, Vegan) 

ELT Sandwich Recipe: Gluten Free / Vegan

-Eggplant (cut into 1/2 inch rings)
Then salt and let moisture draw out, wipe dry after 5 min.
-Cook eggplant in oiled pan over medium high heat, cook until browned on both sides about 3 min. Make sure and season with salt and smoked paprika for extra flavor blast!!

-Slicer tomatoes (cut into 1/2 rings)

-Lettuce (make sure you pre-wash and pat dry, tear into pieces for sandwich).

-Mustard Caviar (in medium sauce pan, bring 1/2c filtered water, 1/2c. distilled white vinegar, pink himalayan sea salt “or salt of your choice”, 2tbsp. tumeric and 1/2c. mustard seeds. Stir everything and bring to a boil and let it reduce by half, about 10 min. Take off the heat and let it cool.

-Arepa buns (1c. masarepa “this is cooked corn meal, can find in local latin market or grocery store” mixed with water, stir until becomes like wet sand. Form into patties and fry over medium high heat in oiled pan until golden brown on both sides. Then bake in oven at 350 degrees for 5-10 min.) Tip: season dry masarepa with what ever spices you like. I used 1tbsp. tumeric, 1tbsp. cumin, 1tsp. pink himalayan sea salt, 1tsp. garlic powder.

-Oiled pan over medium high heat, cook eggplant until browned on both sides about 3 min. Make sure and season with salt and smoked paprika for extra flavor blast!!

-Assembly:
Stack that baby anyway you like!! Feel free to add vegan mayo or sauces of your choice : ) Happy eating tasty eaters!!

Catching Some of the “Rising Stars” of Gluten Free- My First Food Expo Experience

To set the record straight- I am not TasteeBQ, the fictional Superhero. Just the Author. I wore the glasses to catch his spirit. Here with Ester M. Trevino the young, up and coming Author of The Gluten Conundrum.

 

There’s no Business like Show Business… Especially when it comes to Gluten Free (GF) Food Shows. I am primarily a Caterer and am new to the Spice Manufacturing Industry. My Brand is barely a year old. Last weekend we had the opportunity to Exhibit at our very first GF Expo. Perhaps, I should thank Indiegogo. Our current Indie Campaign has yet to rain major money on me. However, maybe it’s existence brought us to the attention of the Show organizers. The Gluten Free Food Allergy Fest is sponsored by Living Without Magazine. Held in San Diego, I got to encounter some of the most exciting new “Stars” of the growing GF Food Scene.

Before it all happened, I was originally going to spend about a month in preparation for our very first Gluten Free Expo in Pasadena, on June 7th. I started the Indiegogo Campaign to make new friends and maybe raise a few funds. At least let a couple of people know we would be at the June Expo. Then I get a call from Shelia, the Coordinator of the San Diego event. She said “I read about you online. We had a last minute cancellation, and think you should be there.” Then she sent me a video of her appearance on the Indianapolis Episode of  the “Tasty Freedom” video series, hosted by Jaquy Y.

Before the Show. Shelia Cafferty is the Event Coordinator for 3 Gluten Free Food Allergy Fests, nationwide. She has also recently become part of “The Gluten Free Three” Consultants for Amy Levy Public Relations, based in Los Angeles.

Note- this was a mere 8 days before the opening day of the Show. I had never done a professional public Food Expo before. So I sought the advice of a seasoned colleague from New York, Barbara. At first she was congratulatory, then emails got sort of quiet. I soon learned on Facebook that she had been preparing to do a live Gluten Free Cooking Demonstration on the Bronx 12 Morning TV News. Barbara did come through with much needed help. It was Barbara who first introduced me to the “Tasty Freedom” video series, as she appeared in the Brooklyn Episode with Jaquy Y.

Barbara Callanan on Bronx 12 TV Morning News. She is also an established Gluten Free Expert with Consult JCB in New York. She and her sister Joan founded “The Golden Apple Rule“, an educational Anti-Bullying initiative to help Kids with Allergies experience less grief in Schools.

 

At the show, I was fortunate to meet Ed from Keil’s Fresh Food Markets, a growing San Diego chain that is poised to give Vons and Walmart a run for their money. Even more fortunately- Keil’s decided to give our new Brand a try, and bought a couple of cases. The product will be available in San Diego at the Keil’s Gluten Free Spring Fling Tent Event on May 17th. They are the only big Retail Store (I know of) that makes such a concerted effort to reach out to Gluten Free customers, advertising over 1500 Gluten Free Products in the stores and online. Because they give big discounts, our challenge will be to “Go Big or Go Home”.  I’ll do my best to stick with the former.

In the middle of the first day I got to meet Ester from The Gluten Conundrum [pictured above]. The young Blogger is branching out this year, in her quest for the best GF Products. She also has great taste in Grilled Steak Salads. I can see Ester following in the footsteps of Jaquy Y., a former producer at the Food Network- now a Chef, Food Consultant, and the Host of “Tasty Freedom”. It turns out Jaquy flew into San Diego from Vietnam in order to present at the Gluten Free Food Allergy Fest. In fact, I watched her give a couple of Lecture/Cooking Demonstrations from my booth, which happened to be next to the Main Stage. However, for two full days I never did have the chance to meet Jaquy Y.

Jaquy Yngvason is one to watch. Her Recipes are not just for people with Celiac’s Disease, but for anyone into Healthier and Delicious Eating. This Chef and Host of the “Tasty Freedom” videos has such a bright future. Wish I had Shades.

Of course that changed. Shelia to the rescue… At the very end of Day 2 the Event Coordinator finally got to taste my product. Shelia also reached out to Jaquy to arrange a personal visit. Upon meeting her, Jaquy was just as warm and exuberant as she is in her “Tasty Freedom” video series. I won’t speak for her on how she feels about my new product HEROIC!, which is an All Natural Superfood BBQ Rub. Let’s just say she took a few bottles back to New York, asking what she can do to help. Actually, she already has been an inspiration. It was truly a pleasure to meet Jaquy Y. If she doesn’t have a show on the Food Network soon, hopefully someone will help her launch a new Gluten Free Food Network. Until next time, Eat and Be Well.

Update 5/8/14– Since finishing the article, I just heard from Jaquy on Facebook. She says “Was great meeting you at the Expo!! Your product has already made it into a couple savory cocktails and many salads… Amazing rub, you must try!!”
