The other development this 4th of July is quite shocking. Something I thought would never ever happen… After over 30 years of Grilling, I am now the owner of a (Gasp!) Gas Grill. I know traditional Grill Masters from Texas to Louisiana are shaking their heads in disbelief. It’s like waking up with a one-night stand that you don’t remember taking home. I allowed the Gas Grill to sit in my Dining Room for a few days before I dared take it out and assemble it.

It all started when I accepted a generous offer from popchips and Weber Grills to attend a special BBQ Boot Camp earlier in June. It was a really nice event. I got to meet interesting Reps from both companies as well as some of the most seasoned Bloggers in the West. The event’s topic was “How to Make the Perfect Burger” which, oddly enough, is something I sometimes struggle with. I teach Grilling Lessons and cater amazing Burgers all of the time. But my technique has always been to measure freshly seasoned Beef into equally sized balls, then smash them into somewhat equally sized patties. At the Boot Camp, I met the Weber Burger Press. This contraption can help you make each Burger equally perfect. Who knew?

Tired of frozen “Hockey Pucks”? Now you can make fresh perfect Burgers with the Weber Burger Press.

Not to neglect popchips (which are branded with a small “p”), our relationship has been a long revolving drama. Since they first hit the shelves a few years ago, I have been obsessed with Barbecue popchips and their Sour Cream and Onion cousins. I never gave Sea Salt popchips a second look, until recently deciding to use them in a new Recipe- Superfood Smoked BBQ popchips. This flavor will not be coming to stores anytime soon, so check out the Recipe at the end. Also, popchips is introducing two new flavors: Crazy Hot and Cinnamon Sweet Potato. I have yet to solve the dilimma of how to put aside a bag of popchips without finishing them all. Fortunately they are Calorie Friendly, because I am seldom able to accomplish this feat.

My Weber Pressed “Perfect Burger” with BBQ popchips at the BBQ Boot Camp.

So the latest addition to my Grill Collection is a parting gift from the BBQ Boot Camp, my own Weber Q 1200. As part of their “Q with Color” campaign I got to choose from a cool palate of hues and decided on Orange. Why? I’ve always thought that odds of me ever owning a Gas Grill were about the same as someone making an Orange Grill. It is no secret that I have been part of Team Charcoal since I started learning about Grilling at age 6. However, I am no stranger to Gas Grills. In fact, most of my Private Grilling Lesson clients are people who want me to show them how to make food from their Gas Grill taste like “real” BBQ.

The Weber Q 1200- my very first Gas Grill took about 1 Hour to assemble. It’s debut on my BBQ Patio.

The secret is simple, yet profound: Smoke. No I am not talking about the black billowing clouds that flair up when the grease meets the heat. I am talking about intentionally adding the sweet scents of Hickory, Mesquite, Cherry, Applewood or Alder to your Grilling. This can be easily achieved by using Wood Chips or Chunks with Charcoal. Some serious Grill Masters skip the Charcoal altogether and cook with Redwood Logs and the Smoke is a natural byproduct. My Private Grilling Lessons usually include figuring out how to make the Smoke linger, because many Gas Grills come with Smoker Drawers or Chambers that simply don’t work.

There are more ways than to sundown to add Smoky flavor to your cooking. Check out my previous post 6 Easy Ways to Get Your “Smoke-On” at Home. In honor of my BBQ Boot Camp hosts, this week I will be using Weber’s prepackaged Wood Chip tins called Firespices for my 4th of July Recipes. Note- you can also buy Weber’s Wood Chips or Chunks loose in bags. For smaller batches of Grilling you can open your Firespices tin and take half of the chips out before soaking them.

Easy 2 Ingredient Recipe: HEROIC! by California Gold BBQ Rubs and your choice a Mayo makes for a delicious spread.

SMOKY MAYO

1 Cup Mayonnaise (can be Low Fat, Organic, or with Olive Oil)

2 Tbsp your Favorite BBQ Rub (I suppose Weber Grill Mates Rub is OK, or use HEROIC! Rub which is Gluten Free with no added Salt or Sugar).

Mix BBQ Rub into Mayo until blended evenly, then cover and refrigerate.

As popchips are already Gluten Free, these Recipes can be made with Vegan or with GF Bread and other products. For Vegetarian version use Tempeh and Vegan Cheese. Recipes are written for Zone Grilling. Please note- The Weber Q 1200 doesn’t have Zones, but Recipes came out great, anyway.

HEROIC! Smoked Superfood BBQ popchips with Grilled Onion Dip.

SUPERFOOD SMOKED BBQ POPCHIPS

1 bag Sea Salt popchips

2 Tbsp HEROIC! (or you can make your own Rub with any dried combination you have of Smoked Paprika, Garlic, Red Bell Pepper, Onion, Turmeric, Cumin, Cinnamon, Thyme, Fennel, Allspice and Nutmeg).

1 pack Cherry Weber Firespices (also to be used in Main Recipe)

Optional- 1 Thick Slice of Onion and 1/2 Cup Sour Cream to make a Smoky Onion Dip (plus optional sprig of Parsley)

Instructions-

1. At least a Half Hour before Grilling immerse Firespices in a bowl or Ziplock bag of Water.

2. Fire up Gas Grill (or Charcoal) to High on one side of Grill. Leave other side of Grill turned off.

3. Use a Foil Tin (or make Aluminum Foil bowl) to mix popchips with BBQ Rub until coated evenly.

4. Once heated, place Firespices tin on hot side of Grill, when it starts to Smoke, place seasoned popchips on unheated half of Grill.

5. If making Onion Dip, season Onion Slices on both sides with BBQ Rub. Grill Onions on heated Grill 2-3 minutes per side. Finely dice Onions and mix in Bowl with 1/2 Cup Sour Cream and 1/4 Cup of Smokey Mayo. Garnish with Chopped Parsley, if available.

6. After 4 minutes, stir Bowl of popchips to let them evenly absorb Smoke for another 3 minutes. [Keep close eye, delicate  popchips can easily burn).

7. Remove popchips from Grill, put in serving Platter or Bowl with optional Smoky Onion Dip.

CHERRY SMOKED BOLOGNA SANDWICHES

(for 8 Entree Sandwiches)

8 Thick Slices of Deli Bologna

16 Slices Deli White Bread

8 Slices Cheddar or Provolone Cheese

1 Head Iceberg Lettuce

16 Thick Slices of Tomato

Smoky Mayo

Optional Yellow or Spicy Brown Mustard and/or BBQ Sauce

1. By now your Grill should still be nice and Smoky. Turn heat to Medium on second half of Grill, reduce hot side to Medium.

2. Place Bread on Grill in Shifts, grilling each side for up to 1 Minute. Be careful, Bread can easily burn.

3. Once Bread is done, place Thick Bologna Slices on Grill, rotate and flip as needed to avoid burning. Goal is to keep them in the Smoke for at least 8-12 Minutes.

4. In last 2 Minutes if cooking, melt 1 Slice of Cheese on each Bologna Slice.

5. Adventurous or Experienced Grill Masters may want to lightly grill Tomato Slices for 1 Minute per side, being careful not to let them go mushy.

5. Assemble Sandwiches by Spreading each Bread Slice with Smoky Mayo, Optional Mustard and BBQ Sauce.

6. Layer 8 Bread sides with Smoked Bologna with Cheese, Tomato, and a small Wedge of Lettuce. Top with Second Slice of Bread. Slice Sandwiches in Half to serve as Entree. Cut into 4-6 Pieces to platter as Appetizers. For Fancy Cocktail or Tea Party Hors D’oeuvres, slice off ends of Bread after assembly for neat, even pieces (feel free to eat the ends yourself). Enjoy!

Two Sundays ago, Drop Dead Diva aired an Episode called “Hero” about a guy who decides to make the world a better place by dressing in costume and saving people. I wear my signature costume sunglasses when I do appearances to Make the World a Better Place to Eat. Also, the latest Rub from my company is called HEROIC!. The first product we released is POWER. The fictional product in the “Hero” Episode is called “Power Blast”, it is an all-natural energy Supplement. Our product HEROIC! is becoming well known as the all-natural BBQ Rub with Superfoods. Last night, I watched with great anticipation the “Milwaukee Madness” Episode of the new show Frankenfood on Spike TV. No, I didn’t win the big $10,000 Prize. Yes, I am barely seen in the show that aired. But they were kind enough to feature me in an Online Video called “Frankenfood: Frankenfail: Popcorn Lips Now”. On the day of the shoot, I thought my round with the Judges went pretty well. Judge Josh played with my sunglasses and couldn’t stop eating my BBQ Popcorn dish. Judge Tony said “This Seasoning is Genius. I am going to take it and make a Million Bucks.” So when my Dish wasn’t right for Judge Krista’s “upscale” Wisconsin restaurant, and they were throwing things at me, I decided to throw my business card back at Judge Tony. You’ll have to see what they did with editing, where they took out all of the positive comments about my flavors (though you see Judges Tony and Josh licking their fingers- Spit Bucket is nowhere in sight).

Yes. I will still maintain my sense of humor. I will continue to watch TV, even Frankenfood. I am sorry to see Drop Dead Diva expire after only 6 Seasons. Bacon Cheddar BraziBurgers are delicious and easy to make. Even better with Grilled Onion and Basil Mayoli.

I first encountered Cheese Bread Brazi Bites at the Gluten Free (GF) Expo in Pasadena in June 2014. In a ballroom dominated by Sweet GF Treats, it was really a delight to discover these savory Snacks. Made with Tapioca Starch, the texture is soft and smooth. The Cheese Bread Snacks (with Parmesan, Cheddar and Bacon) didn’t taste anything like Diet Food. In fact, the intense Cheesy flavor reminded me of the Deep Fried Cheddar Balls I used to get in Chicago and Wisconsin. I have been obsessed with Brazi Bites ever since.

Brazi Bites were demonstarted at the Gluten Free Expo, sponsored by the Celiac Disease Foundation in June, 2014.

The opportunity recently came up for me to cater a Political Fundraiser, hosted by a friend who happens to be Gluten Free. The Menu was to be substantial Hors D’oeuvres that people could grab and go while having conversation. When I mentioned the possibility of making Mini-Burgers using Brazi Bites, the hosts loved it. So did the crowd on the day of the party. The Fresh Baked Buns made them especially delectable. Perfect for the 4th of July, or any party. No one even guessed that the Mini-Burgers were GF.

BraziBurgers are made with Brazi Bites Cheese Bread Snacks and seasoned with HEROIC! Herb and Spice Blend.

BACON CHEDDAR BRAZiBURGERS with SMOKY GRILLED ONION AND BASIL MAYOLI

(For 10 Mini-Burgers)

Ingredients:

1 lb. Ground Beef (80/20 suggested)

2 tbsp. HEROIC! Herb and Spice Blend (by California Gold BBQ Rubs)

1 tbsp. Worcestershire Sauce

1 tsp. Fresh Ground Black Pepper

1/2 tsp. Salt

10 frozen Cheese Bread Brazi Bites with Bacon

For Mayoli:

1 Cup GF Mayonnaise

1/3 Cup Chopped Fresh Basil

2 Thick Slices White Onion

1+1/2 tbsp. HEROIC! Blend

Cooking Instructions: (If no access to Grill, feel free to use indoor Grill Pan, Skillet or Broiler)

1. Preheat Oven to 400 Degrees and BBQ Grill to Medium High. Mix Ground Beef evenly with BBQ Rub, Worcestershire Sauce, Salt and Pepper. Separate into 10 Mini 1.5 oz. Burger Patties.

2. Place frozen Brazi Bites 1 inch apart on Baking Sheet (slightly greased or parchment lined). Bake for 20 Minutes or until Golden Brown.

3. Season Onion Slices on both sides with 1 Tbsp. BBQ Rub, then Grill for 5 Minutes each Side. Grill Mini-Burgers for 2 Minutes per side (or to desired doneness). Don’t walk away, they cook really quickly.

4. Once Onions are done, Chop them into a small mince, and mix with Mayonnaise, Basil and 1/2 Tbsp. BBQ Rub.

5. Gently slice Brazi Bites in half to form Buns. Fill each with one Burger and a generous Dollup of Mayoli. Serve and Enjoy. [We had optional GF Mustard, Pickle Chips and HEROIC! Ketchup/BBQ Sauce as condiments.]

Throwing a BBQ nowadays can be a tricky thing. Especially here in California. The Good News is that as Americans get more advanced Health Care, we are discovering more about Allergies and our Nutritional needs. The Tricky Part is that when you throw a party for family and friends, some Invitees may be Gluten Free, Vegan, Soy Free, Nut Free, etc..  you name it. Fortunately, most of them have the grace to warn the host in advance. You are Thankful. But then, what do you do?

Marinate Veggies in Olive Oil or your favorite Herb Dressing before taking them to the Grill.

Many people think of BBQ as fatty meats and heavy sugary sauces. Fortunately, a new day has come where Grilled and Smoked Foods are finding their way into many healthier diets. I recently had the great fortune of meeting one of my favorite- OK the favorite- Vegan Chef from New York. Her name is Jaquy Yngvason, a former Food Network Producer and now hosting a new series called “Tasty Freedom”, on a Youtube Channel. Not only has she offered her support for my new BBQ Rub product, she has graciously given me permission to have my way with one of her Recipes.

It was a “no-brainer” when I saw a Jaquy dish called the Superfood ELT (Eggplant, Lettuce and Tomato) Sandwich. Hello!? Superfoods are a big part of what I am doing with my Rubs. Her original Recipe Video is only 3 Minutes and Change. She prepares the dish in a Cast Iron Skillet. This would be a good time to meet Jaquy if you haven’t seen her yet.

Tasty Freedom Superfood ELT Sandwich

Wasn’t that Fun? Of course, I had to take the Recipe to the Grill. For my ELT, I added Grilled Red Onions for extra zip. Jaquy used Homemade Gluten Free Buns and a Caviar Mustard Sauce. I took shortcuts and used Organic Gluten Free Mustard and store bought GF Buns. I also did it two ways, using Portobello Mushrooms as an All Natural alternative for the Buns. This recipe is easy to make, just be sure to complete it before adding Meat to the Grill. I will do a copy/paste-able version of recipe, followed by more photos.

Grilled Superfood ELT Sandwiches Ready and Open for Easy Dining.

Grilled Vegan Superfood ELT (Eggplant, Lettuce & Tomato) Sandwich

INGREDIENTS (For 4 Sandwiches)

4 Thick Slices of Eggplant

4 Thick Slices of Heirloom Tomato

4 Thick Slices of Red Onion

Chopped Romaine Lettuce

HEROIC! Herb and Spice Blend by California Gold BBQ Rubs

Olive Oil or Italian Dressing

Organic/Gluten Free Mustard

4 Gluten Free Sandwich Buns

-Optional Substitute, 8 Equal Sized Portobello Mushroom Caps

Salt and Pepper to Taste

PREPARATION

1. Marinate Eggplant, Tomatoes, Onion and Mushrooms in Olive Oil (or Dressing) and HEROIC! BBQ Rub. Add Salt and Pepper to taste.

2. Heat Grill on Medium High. Brush and Oil Grates to prevent sticking. Then grill all Vegetables of both sides. You will know they are done when they can bend using Spatula.

3. Briefly Grill the Tomatoes last along with the GF Sandwich Buns.

4. Assemble Sandwich, adding Mustard to GF Buns (or Mushroom “Buns”). Pile with Eggplant, Tomato, Onion, then Lettuce. Cut in half, and Enjoy.

Briefly Grill the Heirloom Tomatoes. If overcooked, they will collapse and go mushy.

Thanks again to Jaquy for the recipe inspiration. The sandwiches came out tasting amazingly juicy and delicious. I highly recommend biting into them over your plate and not your pants. [This is, unfortunately, based on personal experience]. If you also have Carnivores at your party, feel free to toss a HEROIC! Marinated Steak on the Grill after the Veggies. Broccolli Curried BBQ Tofu by ZeNutritionFoods

As you may know, we recently held a Food Blogger Recipe Contest for HEROIC! The Winner was a Gluten Free Crockpot Beef Stew Recipe by Wheat Freely. I will be sharing it soon. In the meantime, these Vegan Recipes from ZeNutritionFoods are also Winners, in my book. You may want to try them sometime, as well. No Grilling is Required.

Tahini BBQ Tofu

1/2 package firm tofu, cut into cubes

1 tbsp HEROIC! California Gold BBQ rub

1/4 cup tahini

Pinch sea salt and pepper

~ Mix together the ingredients for the sauce, add the cubed tofu and stir to coat all the tofu pieces

evenly

~ Place on a baking sheet and bake at 350 for 20-25 min

*The tahini in this recipe gives it a little bit of a Mediterranean flavor.

BBQ Curry Tofu Scramble

1/2 package firm tofu, squeezed dry

1 cup broccoli

1 cup kale

1 tbsp HEROIC! California Gold BBQ Rub

1 tbsp curry powder

Sea salt and pepper to taste

~ Saute the broccoli in a little bit of coconut oil for a few minutes, add the kale and stir until it

begins to wilt

~ Crumble the tofu into the pan and add the seasonings

~ Stir well to combine and cook for a few more minutes on med/ low

*The curry in this dish works to bring out the cinnamon and cumin in the BBQ rub.

Original Superfood ELT Recipe by Tasty Freedom

Superfood ELT better than the BLT Recipe!! Eggplant Lettuce Tomato Sandwich. (Gluten Free, Vegan) 

ELT Sandwich Recipe: Gluten Free / Vegan

-Eggplant (cut into 1/2 inch rings)
Then salt and let moisture draw out, wipe dry after 5 min.
-Cook eggplant in oiled pan over medium high heat, cook until browned on both sides about 3 min. Make sure and season with salt and smoked paprika for extra flavor blast!!

-Slicer tomatoes (cut into 1/2 rings)

-Lettuce (make sure you pre-wash and pat dry, tear into pieces for sandwich).

-Mustard Caviar (in medium sauce pan, bring 1/2c filtered water, 1/2c. distilled white vinegar, pink himalayan sea salt “or salt of your choice”, 2tbsp. tumeric and 1/2c. mustard seeds. Stir everything and bring to a boil and let it reduce by half, about 10 min. Take off the heat and let it cool.

-Arepa buns (1c. masarepa “this is cooked corn meal, can find in local latin market or grocery store” mixed with water, stir until becomes like wet sand. Form into patties and fry over medium high heat in oiled pan until golden brown on both sides. Then bake in oven at 350 degrees for 5-10 min.) Tip: season dry masarepa with what ever spices you like. I used 1tbsp. tumeric, 1tbsp. cumin, 1tsp. pink himalayan sea salt, 1tsp. garlic powder.

-Oiled pan over medium high heat, cook eggplant until browned on both sides about 3 min. Make sure and season with salt and smoked paprika for extra flavor blast!!

-Assembly:
Stack that baby anyway you like!! Feel free to add vegan mayo or sauces of your choice : ) Happy eating tasty eaters!!
