Cherry Smoked Bologna Sandwiches make the perfect Appetizer alternative to Pigs in Blankets. They taste better too!

Ready? Set? Going into this July, life is leading to new and unexpected directions. The most exciting new thing is taking my Private Grilling Lessons public with an online Blog Talk Radio Show called “BBQ RESCUES!” [Yes, as if I needed to add yet another project.] The show will include Interviews with Food and BBQ Experts, cover Grilling Topics, plus Questions and Answers with people for BBQ Help. I will also do on-location reports while teaching Grilling BBQ Lessons. The show will premiere Live on July 3rd at 10:00am and have a taped Encore presentation on July 4th. Each show will be made into a podcast, available for download on iTunes. Who knows, someday someone may want to bring BBQ RESCUES! to Live TV. You never know…

The other development this 4th of July is quite shocking. Something I thought would never ever happen… After over 30 years of Grilling, I am now the owner of a (Gasp!) Gas Grill. I know traditional Grill Masters from Texas to Louisiana are shaking their heads in disbelief. It’s like waking up with a one-night stand that you don’t remember taking home. I allowed the Gas Grill to sit in my Dining Room for a few days before I dared take it out and assemble it.

#weberq1200 #qwithcolor

After over 30 years of Grilling, my very first Gas Grill arrives courtesy of Weber/popchips.

It all started when I accepted a generous offer from popchips and Weber Grills to attend a special BBQ Boot Camp earlier in June. It was a really nice event. I got to meet interesting Reps from both companies as well as some of the most seasoned Bloggers in the West. The event’s topic was “How to Make the Perfect Burger” which, oddly enough, is something I sometimes struggle with. I teach Grilling Lessons and cater amazing Burgers all of the time. But my technique has always been to measure freshly seasoned Beef into equally sized balls, then smash them into somewhat equally sized patties. At the Boot Camp, I met the Weber Burger Press. This contraption can help you make each Burger equally perfect. Who knew?

#weber #burgerpress

Tired of frozen “Hockey Pucks”? Now you can make fresh perfect Burgers with the Weber Burger Press.

Not to neglect popchips (which are branded with a small “p”), our relationship has been a long revolving drama. Since they first hit the shelves a few years ago, I have been obsessed with Barbecue popchips and their Sour Cream and Onion cousins. I never gave Sea Salt popchips a second look, until recently deciding to use them in a new Recipe- Superfood Smoked BBQ popchips. This flavor will not be coming to stores anytime soon, so check out the Recipe at the end. Also, popchips is introducing two new flavors: Crazy Hot and Cinnamon Sweet Potato. I have yet to solve the dilimma of how to put aside a bag of popchips without finishing them all. Fortunately they are Calorie Friendly, because I am seldom able to accomplish this feat.

My Weber Pressed “Perfect Burger” with BBQ popchips at the BBQ Boot Camp.

So the latest addition to my Grill Collection is a parting gift from the BBQ Boot Camp, my own Weber Q 1200. As part of their “Q with Color” campaign I got to choose from a cool palate of hues and decided on Orange. Why? I’ve always thought that odds of me ever owning a Gas Grill were about the same as someone making an Orange Grill. It is no secret that I have been part of Team Charcoal since I started learning about Grilling at age 6. However, I am no stranger to Gas Grills. In fact, most of my Private Grilling Lesson clients are people who want me to show them how to make food from their Gas Grill taste like “real” BBQ.

#weberq1200 #qwithcolor

The Weber Q 1200- my very first Gas Grill took about 1 Hour to assemble. It’s debut on my BBQ Patio.

The secret is simple, yet profound: Smoke. No I am not talking about the black billowing clouds that flair up when the grease meets the heat. I am talking about intentionally adding the sweet scents of Hickory, Mesquite, Cherry, Applewood or Alder to your Grilling. This can be easily achieved by using Wood Chips or Chunks with Charcoal. Some serious Grill Masters skip the Charcoal altogether and cook with Redwood Logs and the Smoke is a natural byproduct. My Private Grilling Lessons usually include figuring out how to make the Smoke linger, because many Gas Grills come with Smoker Drawers or Chambers that simply don’t work.

#weber #grillspices

Three varieties of Weber Firespices.

There are more ways than to sundown to add Smoky flavor to your cooking. Check out my previous post 6 Easy Ways to Get Your “Smoke-On” at Home. In honor of my BBQ Boot Camp hosts, this week I will be using Weber’s prepackaged Wood Chip tins called Firespices for my 4th of July Recipes. Note- you can also buy Weber’s Wood Chips or Chunks loose in bags. For smaller batches of Grilling you can open your Firespices tin and take half of the chips out before soaking them.

Sea Salt popchips with HEROIC! by California Gold BBQ Rubs

Of course, it’s fine to cook your regular 4th of July Recipes for BBQ Chicken, Ribs, Hot Dogs and/or Burgers. This year, why not thrill your Guests back to childhood by making them Cherry Smoked Bologna Sandwiches with Smoky Mayo. They can be served as a main Entree or cut into Appetizer Bites. I plan to take some to my local Holiday party as a special treat. You should try them at yours. Either way, have a Happy 4th of July. Until next time, Eat and Be Well.

Easy 2 Ingredient Recipe: HEROIC! by California Gold BBQ Rubs and your choice a Mayo makes for a delicious spread.

SMOKY MAYO

1 Cup Mayonnaise (can be Low Fat, Organic, or with Olive Oil)

2 Tbsp your Favorite BBQ Rub (I suppose Weber Grill Mates Rub is OK, or use HEROIC! Rub which is Gluten Free with no added Salt or Sugar).

Mix BBQ Rub into Mayo until blended evenly, then cover and refrigerate.

#popchips #heroicrub #californiagoldbbqrubs

Sea Salt popchips dusted with HEROIC! are already good enough to eat. They take on more magic when smoked for a few minutes.

As popchips are already Gluten Free, these Recipes can be made with Vegan or with GF Bread and other products. For Vegetarian version use Tempeh and Vegan Cheese. Recipes are written for Zone Grilling. Please note- The Weber Q 1200 doesn’t have Zones, but Recipes came out great, anyway.

HEROIC! Smoked Superfood BBQ popchips with Grilled Onion Dip.

SUPERFOOD SMOKED BBQ POPCHIPS

1 bag Sea Salt popchips

2 Tbsp HEROIC! (or you can make your own Rub with any dried combination you have of Smoked Paprika, Garlic, Red Bell Pepper, Onion, Turmeric, Cumin, Cinnamon, Thyme, Fennel, Allspice and Nutmeg).

1 pack Cherry Weber Firespices (also to be used in Main Recipe)

Optional- 1 Thick Slice of Onion and 1/2 Cup Sour Cream to make a Smoky Onion Dip (plus optional sprig of Parsley)

Instructions-

1. At least a Half Hour before Grilling immerse Firespices in a bowl or Ziplock bag of Water.

2. Fire up Gas Grill (or Charcoal) to High on one side of Grill. Leave other side of Grill turned off.

3. Use a Foil Tin (or make Aluminum Foil bowl) to mix popchips with BBQ Rub until coated evenly.

4. Once heated, place Firespices tin on hot side of Grill, when it starts to Smoke, place seasoned popchips on unheated half of Grill.

5. If making Onion Dip, season Onion Slices on both sides with BBQ Rub. Grill Onions on heated Grill 2-3 minutes per side. Finely dice Onions and mix in Bowl with 1/2 Cup Sour Cream and 1/4 Cup of Smokey Mayo. Garnish with Chopped Parsley, if available.

6. After 4 minutes, stir Bowl of popchips to let them evenly absorb Smoke for another 3 minutes. [Keep close eye, delicate  popchips can easily burn).

7. Remove popchips from Grill, put in serving Platter or Bowl with optional Smoky Onion Dip.

#jonsmarkets #bolognas

Jon’s Markets in Los Angeles carries a nice variety of International Bolognas. Thick Sliced Deli Bologna will work best for this Recipe.

#grilledbologna #smokedbologna

Thick Sliced Bologna smoking on the Grill.

CHERRY SMOKED BOLOGNA SANDWICHES

(for 8 Entree Sandwiches)

8 Thick Slices of Deli Bologna

16 Slices Deli White Bread

8 Slices Cheddar or Provolone Cheese

1 Head Iceberg Lettuce

16 Thick Slices of Tomato

Smoky Mayo

Optional Yellow or Spicy Brown Mustard and/or BBQ Sauce

1. By now your Grill should still be nice and Smoky. Turn heat to Medium on second half of Grill, reduce hot side to Medium.

2. Place Bread on Grill in Shifts, grilling each side for up to 1 Minute. Be careful, Bread can easily burn.

3. Once Bread is done, place Thick Bologna Slices on Grill, rotate and flip as needed to avoid burning. Goal is to keep them in the Smoke for at least 8-12 Minutes.

4. In last 2 Minutes if cooking, melt 1 Slice of Cheese on each Bologna Slice.

5. Adventurous or Experienced Grill Masters may want to lightly grill Tomato Slices for 1 Minute per side, being careful not to let them go mushy.

5. Assemble Sandwiches by Spreading each Bread Slice with Smoky Mayo, Optional Mustard and BBQ Sauce.

6. Layer 8 Bread sides with Smoked Bologna with Cheese, Tomato, and a small Wedge of Lettuce. Top with Second Slice of Bread. Slice Sandwiches in Half to serve as Entree. Cut into 4-6 Pieces to platter as Appetizers. For Fancy Cocktail or Tea Party Hors D’oeuvres, slice off ends of Bread after assembly for neat, even pieces (feel free to eat the ends yourself). Enjoy!

Ok I’ll Blab… Look For BBQ Chef Mick Brown (Me!) on Food Network’s Cutthroat Kitchen This Weekend

#white #BatesMotel #ChefMickBrown

Cutthroat Kitchen contestant Chef Mick Brown gets inspiration from the latest Hollywood/Silver Lake, CA. icon- “Bates Motel”. It is actually an art project called “Projection LA” by French Artist Vincent Lamouroux. It was created to “whitewash” a neighborhood eyesore. Making the World a Better Place to See.

I didn’t know how this moment would feel or how I would work the news into my blog, so I’ll just blab it out…

Look for me (Mick Brown!) next Sunday May 31, 2015 at 7 PM (PST)/ 10 PM (EST) on a special edition of Food Network’s (FN) Cutthroat Kitchen called “Grill or Be Grilled”. I’m not at liberty to say how it came about, and (obviously) not the final results of the show, but I can shamelessly beg for your best wishes and support no matter how it goes down. What I can say is that four chefs (including yours truly) are fired up to be named Cutthroat Kitchen’s Grill Master. One chef makes a dish that almost tastes like chicken. Then somebody feels the heat while tied to a rotisserie. Finally, burgers as never before. (Episode: KT0808H). It should be fun. Now, some folks who have followed me may know about my first TV exposure a few years ago by auditioning for Shark Tank (ABC TV). Let’s just say I shouldn’t have stuck my toes in those waters. Then Frankenfood on Spike TV was less than glowing. However, I did manage to star in an awesome product video produced by Beverly Boys Productions https://www.youtube.com/watch?v=DGhwatc1hMI

So, how will I be portrayed on Food Network? Will I get kicked off in the 1st Round? How will my hair look? Will my seriously terrific grilling skills be appreciated? Seriously, everyone who has done Reality TV knows that your image is determined in the final editing, so you never know if you’ll come out looking like the star or the goat. Whatever, look for me on Food Network’s Cutthroat Kitchen this Sunday. All I can say is, keep rooting for me!

What’s That Smoking? 6 Easy Ways To Get Your BBQ “Smoke-On” at Home

Basics of BBQ #3

#austrainsmokers

Good News. You don’t have to build a custom Smokehouse to enjoy natural Wood Smoked flavors at home. Pictured: the Smoke Wagon by the Austrian Smokers. https://www.facebook.com/AustrianSmokers

THE 4 MOST COMMON WAYS TO SMOKE FOOD:

1. Manufactured and DIY Outdoor Grills

2. Outdoor/ Indoor Custom BBQ Smoke Pits

3. Indoor Electric Smokers/ Devices

4. Stove Top Smoking

OK. Maybe you don’t own a custom built or manufactured BBQ Smoker. Still, it can be easy to add fresh Wood Smoke flavor to your cooking at home. Smoking always adds a delicious new dimension to foods. There are literally Thousands (1000’s) of Makes, Models and Styles of BBQ Grills throughout the world. When you add in the wide variety of DIY BBQ Pits and Grill hybrids created by home GrillMasters, the number can easily be in the Millions. We see Hundreds of photos of unique, homemade BBQ Grill creations each week on Google+. Twitter, Facebook and Pinterest.

#stovetopsmoking

The World’s easiest way to add Smoky flavor in your home kitchen. Make a DIY Stovetop Smoker using a dedicated Pot, Foil Wood Chip Pouch and a Food Rack (not pictured). Best used gently with Pre-cooked foods.

Smoking has been used as a technique to preserve food for centuries. Along with natural Wood Smoke, cooks would also use some form of Salt or Sodium to cure meat. Of course, Salt adds plenty of flavor, but most Nutritionist’s agree that “Less is more”.  That is one of the reasons I made POWER Rub with much lower amounts of Sea Salt and Brown Sugar. We decided to produce HEROIC! with No Added Salt or Sugar.

#charcoalsmoking #woodchips

A common way to add Smoke for Charcoal Grilling. Place soaked Wood Chips or Chunks directly onto the hot coals.

When you are ready to add Smoke, here are 6 Easy Ways To Get Your BBQ “Smoke-On” at Home:

1. Outdoor Smokers or Custom Smoke Pits/ Boxes- Most common, really not too difficult to use once you get the hang of it. The more time you spend experimenting, the better you become at it.

2. Charcoal Grills- The more interior space the better, but any size will do. Whether using Wood Chips, Chunks, Pellets or Cubes- food comes out better by the use of Slow and Indirect Smoking. The technique will differ for each Grill. The best way to learn is to search “Indirect Smoking on (Add Your Model) Grill”. The internet shall reward you with a wealth of knowledge.

3. Gas/ Laser Grills- Indirect Smoking techniques differ with each model. Some have built-in smoker drawers, for others you can purchase a metal smoke box or tube. Or you could use an aluminum foil pan, or make your own foil basket (or “Hobo Pouch”). Another good occasion to search “Indirect Smoking on (Add Your Model) Grill”.

4. Electric Smokers- There is a good selection available for outdoor and indoor use. However, this category is a favorite for creative and inventive BBQ cooks all over the world. The fact is: you can use any high heat element or source to create natural wood smoke. The level/duration of smoking and chamber used makes all the difference. A good search would be “Homemade Electric Smokers”. You’ll be surprised by the DIY variety.

5. Stovetop Smoking- This technique is best used to add quick, natural Wood Smoke flavor to pre-cooked foods. Some Stovetop models are commercially available. This can be easily done DIY at home by using a dedicated Pot, Chip Pan and a Food Rack. Stovetop Tea Smoking has been used by Chefs around the world ever since stoves were invented.

6. Smoke Guns/ Countertop Chambers- These new devices are easy to use, but may be difficult to obtain for your kitchen. Each model comes with it’s own instructions. We are seeing them more and more on cooking shows. An affordable home version can’t be too far away in the future.

#indirectsmoking

Indirect Smoking on DIY outdoor Electric Smoker using a Single Burner, Rack, and Pan of Wood Chips.

If you have never tried Smoking before, go ahead- try it today or the next time you cook. You don’t even need to fire up a Grill. Use the above methods to bring natural Wood Smoked flavor to everything from Chips, Nuts, to Seafood, Sausages, Hams, Turkeys and even Rotisserie Chickens. Go for it- get your “Smoke-On”! Until next time, Eat and Be Well.

What is BBQ? The Top 4 Definitions of “BBQ”

Basics of BBQ #1

Courtesy of http://www.BBQCateringConfidential.com

#bbqprok

Upscale BBQ Pork Roast at La Petite Cour restaurant in Paris. France.

What is BBQ?

When you think about it, this could one of the World’s Greatest Mysteries. How did the word “BBQ” spread across the planet? Could it be with our language differences, it is just easier to say “BBQ” to describe tasty food? This all-inclusive term is used regionally around the United States, and in countries all over the world. It would take written volumes to describe all of the different styles. For the purposes of this Series, we will go over some the more common ways food considered BBQ is prepared around the world.

#bbqgrill #puertvallartamexico

A sidewalk Mixed  Grill at a restaurant in  Puerto Vallarta, Mexico.

The Top 4 Ways the Word “BBQ” is Used:

1. Seasoned Foods– Many of these come nowhere near a grill, but are seasoned with dry mixtures that possess the familiar sweet and smoky flavors; i.e. BBQ Potato Chips, Pork Rinds, Sunflower Seeds, etc…

#bbqchips

BBQ Seasoned Sweet Potato and Veggie Chips.

2. BBQ Sauces– They come in a wide variety of flavors and colors all over the world. Most are commonly added to Grilled or Smoked foods. May also be used on Broiled, Baked, Slow Cooker, Fried dishes, or as a Condiment; i.e. Baked BBQ Chicken. Fried BBQ Chicken Wings, Slow Cooker BBQ Pulled Pork, etc…

#bodeans

Texas style House-made BBQ Sauces at Bodean’s BBQ in London.

3. Grilled Foods– There are a vast array of cooking styles and techniques that people consider Grilling. From using a Griddle, to a Grill Pan, charring food in a Skillet or Wok, Stovetop and Countertop Grilling Devices. Of course there is outdoor cooking with Open Flame, on a Grill or in a Pit.

#MoroccanGrilledChicken #MomosLondon

Moroccan style Grilled Chicken with Couscous and all the Trimmings at Momo’s in London.

4. Smoked Foods– For some people, food isn’t BBQ unless it has been infused with some form of smoke flavor. This can be done with Liquid Smoke, Wood Chips, Wood Chunks or cooked in a Wood Burning Oven, Terrine or Pit.

#smokedribs

Smoked Ribs at The Joint restaurant in New Orleans.

Of course, there are many exceptions. For some reason, when it comes to Vegetable and Seafood dishes, people tend to refer to them as “Grilled” or “Smoked”, as opposed to BBQ. This is true even when they are cooked using the same techniques as the Meats. The popular dish BBQ Shrimp in New Orleans is sautéed in a skillet and served with a pan BBQ sauce. A big food chain in Korea is called BBQ Chicken. For them, the term “BBQ” stands for “Best of the Best Quality”. While Grilled Chicken is on thier Menu, the chain is best known for Fried Chicken. Go Figure…

Until next time, Eat and Be Well.

Mick on TV: Frankenfood vs. Drop Dead Diva

By Mick Brown

#Frankenfood #MickBrown #Popcorn

How I wanted to plate “A Popcorn Lips Now” for Frankenfood before we decided to put it into Popcorn boxes.

“Go Directly to Online Video. Do Not Pass ‘Go’! Do Not Collect $10,000 Dollars…” That just about sums it up. June has been an interesting month for me with TV Shows. I can’t prove that the writers of Lifetime’s Drop Dead Diva have ever heard of me or my BBQ Rubs company. However, there are so many coincidences in the Episode before the Series Finale… Now that the segment I filmed for Frankenfood has aired, I can take you Behind the Scenes of What Had Happened.

#MickBrown #FrankenFood #FoodTruck

A visit to the Frankenfood Food Truck in Los Angeles.

Two Sundays ago, Drop Dead Diva aired an Episode called “Hero” about a guy who decides to make the world a better place by dressing in costume and saving people. I wear my signature costume sunglasses when I do appearances to Make the World a Better Place to Eat. Also, the latest Rub from my company is called HEROIC!. The first product we released is POWER. The fictional product in the “Hero” Episode is called “Power Blast”, it is an all-natural energy Supplement. Our product HEROIC! is becoming well known as the all-natural BBQ Rub with Superfoods. Coincidences?  Get a bag of Popcorn, watch the “Hero” Episode of Drop Dead Diva, and you decide. [Also note that the flyer for “Power Blast” looks very similar to my company’s Facebook page.]

http://www.mylifetime.com/shows/drop-dead-diva/video/season-6/episode-12/episode-12-hero

Last night, I watched with great anticipation the “Milwaukee Madness” Episode of the new show Frankenfood on Spike TV. No, I didn’t win the big $10,000 Prize. Yes, I am barely seen in the show that aired. But they were kind enough to feature me in an Online Video called “Frankenfood: Frankenfail: Popcorn Lips Now”. On the day of the shoot, I thought my round with the Judges went pretty well. Judge Josh played with my sunglasses and couldn’t stop eating my BBQ Popcorn dish. Judge Tony said “This Seasoning is Genius. I am going to take it and make a Million Bucks.” So when my Dish wasn’t right for Judge Krista’s “upscale” Wisconsin restaurant, and they were throwing things at me, I decided to throw my business card back at Judge Tony. You’ll have to see what they did with editing, where they took out all of the positive comments about my flavors (though you see Judges Tony and Josh licking their fingers- Spit Bucket is nowhere in sight).

http://www.spike.com/video-clips/djashe/frankenfood-frankenfail-popcorn-lips-now

Yes. I will still maintain my sense of humor. I will continue to watch TV, even Frankenfood. I am sorry to see Drop Dead Diva expire after only 6 Seasons. [Which may be 5 more than we’ll ever see of Frankenfood?] Time will tell. In the meantime, I will work on getting a real Publicist for some positive Press. A sincere Thanks the show’s producers for inviting me to compete. I wish Frankenfood the Best of Luck. And to Judge Tony: You can still call me. Let’s make that Million Bucks together. Bacon Cheddar BraziBurgers: Gluten Free BBQ for the 4th of July

#BraziBites #HeroicBBQRub #BraziBurgers

Bacon Cheddar BraziBurgers are delicious and easy to make. Even better with Grilled Onion and Basil Mayoli.

I first encountered Cheese Bread Brazi Bites at the Gluten Free (GF) Expo in Pasadena in June 2014. In a ballroom dominated by Sweet GF Treats, it was really a delight to discover these savory Snacks. Made with Tapioca Starch, the texture is soft and smooth. The Cheese Bread Snacks (with Parmesan, Cheddar and Bacon) didn’t taste anything like Diet Food. In fact, the intense Cheesy flavor reminded me of the Deep Fried Cheddar Balls I used to get in Chicago and Wisconsin. I have been obsessed with Brazi Bites ever since.

#BraziBites #GlutenFreeExpo

Brazi Bites were demonstarted at the Gluten Free Expo, sponsored by the Celiac Disease Foundation in June, 2014.

The opportunity recently came up for me to cater a Political Fundraiser, hosted by a friend who happens to be Gluten Free. The Menu was to be substantial Hors D’oeuvres that people could grab and go while having conversation. When I mentioned the possibility of making Mini-Burgers using Brazi Bites, the hosts loved it. So did the crowd on the day of the party. The Fresh Baked Buns made them especially delectable. Perfect for the 4th of July, or any party. No one even guessed that the Mini-Burgers were GF.

BraziBurgers are made with Brazi Bites Cheese Bread Snacks and seasoned with HEROIC! Herb and Spice Blend.

BACON CHEDDAR BRAZiBURGERS with SMOKY GRILLED ONION AND BASIL MAYOLI

(For 10 Mini-Burgers)

Ingredients:

1 lb. Ground Beef (80/20 suggested)

2 tbsp. HEROIC! Herb and Spice Blend (by California Gold BBQ Rubs)

1 tbsp. Worcestershire Sauce

1 tsp. Fresh Ground Black Pepper

1/2 tsp. Salt

10 frozen Cheese Bread Brazi Bites with Bacon

For Mayoli:

1 Cup GF Mayonnaise

1/3 Cup Chopped Fresh Basil

2 Thick Slices White Onion

1+1/2 tbsp. HEROIC! Blend

Cooking Instructions: (If no access to Grill, feel free to use indoor Grill Pan, Skillet or Broiler)

1. Preheat Oven to 400 Degrees and BBQ Grill to Medium High. Mix Ground Beef evenly with BBQ Rub, Worcestershire Sauce, Salt and Pepper. Separate into 10 Mini 1.5 oz. Burger Patties.

2. Place frozen Brazi Bites 1 inch apart on Baking Sheet (slightly greased or parchment lined). Bake for 20 Minutes or until Golden Brown.

3. Season Onion Slices on both sides with 1 Tbsp. BBQ Rub, then Grill for 5 Minutes each Side. Grill Mini-Burgers for 2 Minutes per side (or to desired doneness). Don’t walk away, they cook really quickly.

4. Once Onions are done, Chop them into a small mince, and mix with Mayonnaise, Basil and 1/2 Tbsp. BBQ Rub.

5. Gently slice Brazi Bites in half to form Buns. Fill each with one Burger and a generous Dollup of Mayoli. Serve and Enjoy. [We had optional GF Mustard, Pickle Chips and HEROIC! Ketchup/BBQ Sauce as condiments.]

Vegan, Gluten-Free, Superfood BBQ Recipes For the Holidays, or Any Day

By Mick Brown

www.BBQCateringConfidential.com

#GrilledEggplant

Grilled Superfood ELT (Eggplant, Tomato, Lettuce) Sandwiches. With Gluten Free Bun in foreground,. All Natural version with Portobello Mushroom “Buns” in back.

Throwing a BBQ nowadays can be a tricky thing. Especially here in California. The Good News is that as Americans get more advanced Health Care, we are discovering more about Allergies and our Nutritional needs. The Tricky Part is that when you throw a party for family and friends, some Invitees may be Gluten Free, Vegan, Soy Free, Nut Free, etc..  you name it. Fortunately, most of them have the grace to warn the host in advance. You are Thankful. But then, what do you do?

#BBQVegetables #GrilledVegetables

Marinate Veggies in Olive Oil or your favorite Herb Dressing before taking them to the Grill.

Many people think of BBQ as fatty meats and heavy sugary sauces. Fortunately, a new day has come where Grilled and Smoked Foods are finding their way into many healthier diets. I recently had the great fortune of meeting one of my favorite- OK the favorite- Vegan Chef from New York. Her name is Jaquy Yngvason, a former Food Network Producer and now hosting a new series called “Tasty Freedom”, on a Youtube Channel. Not only has she offered her support for my new BBQ Rub product, she has graciously given me permission to have my way with one of her Recipes.

#GrilledOnion

Besides Grill Marks, check to see if Veggies will bend. Then you know they are closer to done.

It was a “no-brainer” when I saw a Jaquy dish called the Superfood ELT (Eggplant, Lettuce and Tomato) Sandwich. Hello!? Superfoods are a big part of what I am doing with my Rubs. Her original Recipe Video is only 3 Minutes and Change. She prepares the dish in a Cast Iron Skillet. This would be a good time to meet Jaquy if you haven’t seen her yet.

Tasty Freedom Superfood ELT Sandwich

Wasn’t that Fun? Of course, I had to take the Recipe to the Grill. For my ELT, I added Grilled Red Onions for extra zip. Jaquy used Homemade Gluten Free Buns and a Caviar Mustard Sauce. I took shortcuts and used Organic Gluten Free Mustard and store bought GF Buns. I also did it two ways, using Portobello Mushrooms as an All Natural alternative for the Buns. This recipe is easy to make, just be sure to complete it before adding Meat to the Grill. I will do a copy/paste-able version of recipe, followed by more photos.

Thanks again to Jaquy for the recipe inspiration. The sandwiches came out tasting amazingly juicy and delicious. I highly recommend biting into them over your plate and not your pants. [This is, unfortunately, based on personal experience]. If you also have Carnivores at your party, feel free to toss a HEROIC! Marinated Steak on the Grill after the Veggies. Slice it thin and add it above the Eggplant to make some the the Healthiest Steak Sandwiches, ever. I hope everyone has a great Holiday Weekend. Until next time, Eat and Be Well.

“California Gold BBQ Rubs are all natural and contain no salt or sugar. This unique blend of spices is much more than a BBQ rub. The variety of spices from turmeric to fennel would be a great compliment to many different dishes. Since I usually cook dishes with a global influence, I decided to do the same here to put my spin on it.”- ZeNutritionFoods

Catching Some of the “Rising Stars” of Gluten Free- My First Food Expo Experience

By Mick Brown

#MickBrown #EsterMTrevino

To set the record straight- I am not TasteeBQ, the fictional Superhero. Just the Author. I wore the glasses to catch his spirit. Here with Ester M. Trevino the young, up and coming Author of The Gluten Conundrum.

There’s no Business like Show Business… Especially when it comes to Gluten Free (GF) Food Shows. I am primarily a Caterer and am new to the Spice Manufacturing Industry. My Brand is barely a year old. Last weekend we had the opportunity to Exhibit at our very first GF Expo. Perhaps, I should thank Indiegogo. Our current Indie Campaign has yet to rain major money on me. However, maybe it’s existence brought us to the attention of the Show organizers. The Gluten Free Food Allergy Fest is sponsored by Living Without Magazine. Held in San Diego, I got to encounter some of the most exciting new “Stars” of the growing GF Food Scene.

Before it all happened, I was originally going to spend about a month in preparation for our very first Gluten Free Expo in Pasadena, on June 7th. I started the Indiegogo Campaign to make new friends and maybe raise a few funds. At least let a couple of people know we would be at the June Expo. Then I get a call from Shelia, the Coordinator of the San Diego event. She said “I read about you online. We had a last minute cancellation, and think you should be there.” Then she sent me a video of her appearance on the Indianapolis Episode of  the “Tasty Freedom” video series, hosted by Jaquy Y.

#SheliaCafferty #GlutenFree3 #GlutenFreeFoodAllergyFest

Before the Show. Shelia Cafferty is the Event Coordinator for 3 Gluten Free Food Allergy Fests, nationwide. She has also recently become part of “The Gluten Free Three” Consultants for Amy Levy Public Relations, based in Los Angeles.

Note- this was a mere 8 days before the opening day of the Show. I had never done a professional public Food Expo before. So I sought the advice of a seasoned colleague from New York, Barbara. At first she was congratulatory, then emails got sort of quiet. I soon learned on Facebook that she had been preparing to do a live Gluten Free Cooking Demonstration on the Bronx 12 Morning TV News. Barbara did come through with much needed help. It was Barbara who first introduced me to the “Tasty Freedom” video series, as she appeared in the Brooklyn Episode with Jaquy Y.

Barbara Callanan on Bronx 12 TV Morning News. She is also an established Gluten Free Expert with Consult JCB in New York. She and her sister Joan founded “The Golden Apple Rule“, an educational Anti-Bullying initiative to help Kids with Allergies experience less grief in Schools.

At the show, I was fortunate to meet Ed from Keil’s Fresh Food Markets, a growing San Diego chain that is poised to give Vons and Walmart a run for their money. Even more fortunately- Keil’s decided to give our new Brand a try, and bought a couple of cases. The product will be available in San Diego at the Keil’s Gluten Free Spring Fling Tent Event on May 17th. They are the only big Retail Store (I know of) that makes such a concerted effort to reach out to Gluten Free customers, advertising over 1500 Gluten Free Products in the stores and online. Because they give big discounts, our challenge will be to “Go Big or Go Home”.  I’ll do my best to stick with the former.

#EdYankovich #KeilsSanDiego #MickBrown

With Ed Yankovich of Keil’s Fresh Food Markets at the Gluten Free Food Allergy Fest in San Diego. They will be the first store to offer HEROIC! to the San Diego public at Keil’s Gluten Free Spring Fling Tent Event on May 17th. Go there for a chance to taste it for yourself.

In the middle of the first day I got to meet Ester from The Gluten Conundrum [pictured above]. The young Blogger is branching out this year, in her quest for the best GF Products. She also has great taste in Grilled Steak Salads. I can see Ester following in the footsteps of Jaquy Y., a former producer at the Food Network- now a Chef, Food Consultant, and the Host of “Tasty Freedom”. It turns out Jaquy flew into San Diego from Vietnam in order to present at the Gluten Free Food Allergy Fest. In fact, I watched her give a couple of Lecture/Cooking Demonstrations from my booth, which happened to be next to the Main Stage. However, for two full days I never did have the chance to meet Jaquy Y.

#JaquyYngvason #MickBrown #Heroic! #CaliforniaGoldbbqrubs #tastyfreedom

Jaquy Yngvason is one to watch. Her Recipes are not just for people with Celiac’s Disease, but for anyone into Healthier and Delicious Eating. This Chef and Host of the “Tasty Freedom” videos has such a bright future. Wish I had Shades.

Of course that changed. Shelia to the rescue… At the very end of Day 2 the Event Coordinator finally got to taste my product. Shelia also reached out to Jaquy to arrange a personal visit. Upon meeting her, Jaquy was just as warm and exuberant as she is in her “Tasty Freedom” video series. I won’t speak for her on how she feels about my new product HEROIC!, which is an All Natural Superfood BBQ Rub. Let’s just say she took a few bottles back to New York, asking what she can do to help. Actually, she already has been an inspiration. It was truly a pleasure to meet Jaquy Y. If she doesn’t have a show on the Food Network soon, hopefully someone will help her launch a new Gluten Free Food Network. Until next time, Eat and Be Well.

Update 5/8/14– Since finishing the article, I just heard from Jaquy on Facebook. She says “Was great meeting you at the Expo!! Your product has already made it into a couple savory cocktails and many salads… Amazing rub, you must try!!”

There you go. Now I am an even bigger Jaquy Y. fan!

Should I Stay or “Indiegogo” to the Gluten Free Expo?

#heroicbbqpopcorn

HEROIC! BBQ Popcorn with and without Nuts. Tasting held at Los Angeles Economic Development Committee Meeting in March 2014.

Some will say “It’s about time”, but how do you sum up your life on one page?  Still, I finally got around to adding an About (me) Page for BBQ Catering Confidential. It is still a work in progress, but is good for now. In other news, we recently decided to have a go at Indiegogo.

Indiegogo what? Some may ask. [It was me (asking) about six months ago]. Of course, most people have heard of Kickstarter.com, where Celebs go for help funding their movie projects. Indiegogo is supposedly the second most popular crowd funding site. It gives campaigns the advantage of collecting any pledged funds, even if they fall short of the specified goal. If anything, Indiegogo may be good practice in case we decide to do the big Kickstarter show in the future.

#heroicbbqrub

HEROIC! comes in 2.5 oz. and 5 oz. bottles. Popcorn not included.

Here,  I should quash any rumors that the Rub company is in trouble. Au Contraire, it is just getting started. We plan to be in more Retailers than ever by Memorial Day 2014. However, it is true that when launching a Brand, the start-up costs keep rolling in. Long before you have a chance to sell the thousands to units to cover them.

The Gluten Free Expo is a great opportunity that I just heard about. Having never been to a Gluten Free Expo, or sponsored a booth, it will  be a learning experience. Will definitely let you know how it goes. However, the event isn’t until June 7th, which may be too close to the 4th of July to add many more Retailers. As much as I’d like to go, the current budget is better spent on Memorial Day promotions. Big Retail Contacts made in June may not become active until Summer 2015.

Enough “Business Strategy” session. Anyway, I will keep you posted on the Indiegogo Campaign. If nothing else, it is a good opportunity to present what the company is all about on one page. And it led to us creating our first professional video, starring yours truly. Check it out when you have a chance.

Also, we got a chance to create a new line of swag from American Apparel that (for now) is exclusively available through the campaign. Also, there are Gift Certificates for Catering and BBQ Cooking Lessons from Tastee BQ Grilling Co.

#heroicmerchandise

Campaign Perks include Long Sleeve T-shirts from American Apparel, Aprons and unique BB Caps.

I am still playing catch-up, having recently returned from a trip to Chicago. Will get you dispatches from there soon. The overall report is that Food is just fine in the Windy City. Along with making some contacts and visiting family, I got to come face-to-face with an important piece of my family Food History. They showed me a 1956 ad from my father’s yearbook promoting the Friendly BBQ Cafe owned by my Grandfather in Longview, TX. You can see it and more on the new About page. Until next time, Eat and Be Well.
